We received our box last week and used the ground beef for burgers on Friday and it was amazing. Sunday morning we pulled the rib eye steaks out of the freezer, destined for the BBQ. While the quality of the beef was amazing and tender the butchering was sadly lacking. One steak was about 1 inch thick, about minimum for a ribeye IMHO. The other steak was only 1/2” thick! Who in their right mind turns a great ribeye in to a fast fry steak? I guess it is back to the local butcher for me where I can insist on a proper cut.
Thanks for the feedback Don. Sorry for the thickness variation. Hope it still tasted great, I burned a thin ribeye last week to well down by accident and still enjoyed it. Our steaks are portioned by weight with a vision system, 12 oz. We do a plus 50g and minus 20g sort but sometimes we let the heavier steaks through rather than trimming them down. A 1' steak looks like you may have gotten a 14-15+ oz one. Not sure. I used to work at a place that sells 8oz ribeyes online so thought 12 oz was a decent increase, normally they hit 3/4' unless they are a large ribeye to start. Guessing our box packer paired a skinnier steak with a fat one to balance this out for the future customer. Boxes are packed when we cut them at the federal plant, not by order.
We have heard feedback from several folks looking for thicker steaks. We recently did a small test run for Extra Thick steaks, 22 oz ribeyes and 16 oz striploins. They hit the online store last week. We launched with 30 boxes and are planning to make more in June. They look epic. Selling meat online with fixed weight boxes requires tight porton control, which does mean some variation in thickness. Hope this explanation helps.

The hamburger rolls are very small is my only concern. I’d like to have full pound rolL
I would prefer thicker steaks but the meat is good quality and not too lean. I wanted stew meat rather than stir fry.
